Assemble ingredients, chop potato into slices.

In moderately heated pan add oil, allow to heat, add bay leaf + cumin seeds + dry red chilli and allow to sizzle.
Add potato and sauté for 2 minutes. - 3
Add chopped Ridge Gourd + little salt + green chilli and sauté for around 2 minutes.

Then add turmeric powder and sauté for around 2 minutes, cover and cook for 3-4 minutes. Ridge Gourd shrinks and leaves water.

Uncover, add cumin powder + coriander powder and sauté for 3-4 minutes.

Add milk, stir well, add maida / Atta and mix well, add sugar also and cook for 4-5 minutes. Keep stirring in between.
Lastly add ghee, simmer and cook for around 2 minutes and dish is done. - 7
Serve with hot steamed rice.
