Simple! Fruit Kanten Made with Your Favorite Juice

I wanted to make a snack with my kids. Store-bought kanten has a bit of a peculiar smell to it, and didn't really want to use it to make a snack, so I simply made it at home. It is pretty and colorful, refreshingly healthy, and fun. This just might become my summer dessert.

The constitution and texture of the jelly will vary according to the kanten. It will fall apart if there is too much water. You can make this as sweet as you like, but there won't be much water if there is too much sugar. It will become a bit watery if you don't eat it right away, but please dish it up along with that water. You can also make this with vegetable juice. Recipe by Mikki-an

Ingredients

  1. 4 gramsPowdered kanten
  2. 200 mlWater
  3. 1~2 tablespoons Sugar (or honey)
  4. 250 mlYour favorite 100% fruit juice

Cooking Instructions

    Add the water and kanten to a pot, and bring to a boil while stirring continuously. Boil for 2 more minutes after it has come to a boil to dissolve the kanten.

    Add sugar to step 1, and keep boiling until the sugar dissolves.

    Turn off the heat and add in the juice, and stir well. After mixing, strain it into a square plastic storage container.

    After the residual heat from step 3 has subsided, store it in the fridge until you are read it to eat it.

    Cut the kanten from step 4 into big pieces, and push it out with a poker. You can totally leave this step up to your kid.

    Serve onto plates, and arrange with mint or fruit if you have it. I made it with pineapple juice today. I ate it with mint and cherries.

    Please pour liquid syrup or juice onto the plate if the flavor is a bit weak.

    If you don't have a jelly press, then cut it into squares. The texture is different than storebought kanten.
