Steps

Assemble ingredients, make paste of chopped tomatoes + ginger + green chilli and keep aside.

Assemble ingredients, marinade boiled potatoes with little salt + turmeric and rest for 10 - 15 minutes.

Fry marinaded potatoes till golden brown and keep aside.

Make paste of Coriander by adding little water and keep aside.

In moderately heated pan / kadhai, add oil allow to heat, add cumin seeds and allow to crackle then add chopped garlic and sauté for a second, add chopped Onion and sauté till golden brown.

Add tomato paste + salt and sauté for around 2 minutes to evaporate water.

Add curd and sauté for around 2 minutes. Add spices like Coriander powder and sauté till oil is seen on surface.

Masala is fried well. Add coriander paste + 3-4 tbsp water and cook for 2-3 minutes.

Add fried potatoes + Garam Masala + sugar and cook further for 3-4 minutes.

Add cream / Malai + Kasuri Methi, simmer and cook for around 2-3 minutes.

Dish is done and ready to serve.

Serve with plain rice, phulka, paratha, naan, Kulcha.
