Steamed Red Snapper with Ginger

I went to the market hoping to find small red snapper to fry with lemongrass and chili, but only large red snapper was available, cut into steaks. I bought two pieces and decided that steaming the fish would be the best way to enjoy it. It’s quick to make and disappears in no time once served.

Rinse the fish steaks with salt and water, then drain well. Place the fish in a tray and marinate with 2 tablespoons soy sauce (30 ml), 2 tablespoons oyster sauce (30 ml), 1 teaspoon sesame oil (5 ml), 1 teaspoon white wine (5 ml), 1 tablespoon fish sauce (15 ml), 1 tablespoon sugar (12 grams), and black pepper. Mix well to coat the fish, then slice ginger into thin strips. Place the fish in a steamer and steam for 40 minutes. When done, top with green onions while the fish is still hot.
