I used white brown rice that I had already cooked the day before for this recipe. I added turmeric to the vegetable stir-fry with the rice to give it a nice yellow color. You can also add the turmeric directly to the water when cooking the rice.

Ingredients

15 min prep, 40 min cooking
Serves 6 servings
  • 1 cupbrown rice (about 200 grams)
  • 2 cupswater (about 480 ml)
  • 1/2 teaspoonsalt
  • 1beaten egg
  • 1 tablespoonvegetable oil
  • 2 clovesgarlic, finely chopped
  • 1 teaspoonfresh ginger, finely chopped
  • 1/3 cupred onion, diced (about 50 grams)
  • 1/4red bell pepper, diced (about 35 grams)
  • 3green onions, thinly sliced
  • 1 cupshiitake mushrooms, diced (about 70 grams)
  • 1/4 teaspoonground turmeric
  • 1 teaspoonsoy sauce (optional)

Steps

15 min prep, 40 min cooking
  1. 1

    In a small pot, combine the brown rice, water, salt, and turmeric. Bring to a boil, then reduce the heat and simmer for about 40 minutes, until the rice is tender and the water is absorbed. You can also follow the instructions on your rice package.

    I used rice that I had already cooked the day before and added the turmeric during the vegetable stir-fry.

    Cook the egg in a skillet to make a thin omelet, then cut it into small squares. Set aside.

    Heat a skillet with a little oil and sauté the garlic, ginger, and red onion together.

    Add the green onions, red bell pepper, and shiitake mushrooms. Cook for about a minute until the mushrooms are tender. Add the turmeric if you are using pre-cooked rice.

    Add the cooked rice and the diced omelet to the skillet and mix well. Heat thoroughly before serving. Sprinkle with cilantro if desired.
