In a pan heat oil and add chopped onions, ginger/garlic paste, and lemon grass. Lightly fry until onions turn succulent

Pour in your pepper mix (blended scotch bonnet, red pepper, onions and tomatoes)

Pour the cut and washed lamb me

Add in the spices and seasoning. Cover and let it start cooking. After 8-10 minutes. Add water and continue cooking.

Cook for about 45-60 minutes. Keep adding water until the lamb is tender and soft.

You can serve with white rice. I served mine with brown rice
