Steps

Wash the vegetables and peel. When peeling the Potol then don’t peel fully but keep a bit of the peel otherwise the Potol will turn mushy. Wash the rice and air dry.

In a bowl take all Masala and ginger paste and adding 1/4 cup water mix, set aside.

In a wok heat sunflower oil and add the raisins, cashew nuts and rice and fry until rice is translucent. Set aside

In a separate wok heat mustard oil and add Potol and fry, set aside.

In the same wok add bay leaf, dry red chilli and stir for 1 second. Add whole garam masala and cumin seeds and stir for 30 seconds

Add Potatoes and fry until golden in colour. Add the masala paste and mix well. Cook covered until oil surfaces, sprinkle water so as not to stick to the bottom.

Oil will surface. Add fried cashew nuts-raisins and rice and mix well, sprinkle water and add salt and sugar. Mix well and cook covered for 6 mins

Add fried Potol and sprinkle water and cover to cook for 8 mins. In between check and add water until fully cooked but not over cooked

The consistency should be dry but this is not Pulao.
