Ingredients

1 hour
8 ppl
  • 4 cupssella rice (measuring cup)
  • 1 kgmutton with bones
  • 4onions sliced
  • 1garlic bulb
  • 1tspn grinded garam masala
  • 1tspn whole (sabut) garam masala
  • 2-3grinded green chillies
  • 3-4star anise flower dried (baadiyan ka phool)
  • 2carrots Julian cut
  • Halfcup raisin (kishmish)
  • 2-3 tbspnbutter
  • Salt to taste
  • Water for making yakhni
  • 2 tbspnsugar
  • Halfcup oil for cooking

Steps

  1. 1

    First of all in a big pot add mutton,water, one garlic bulb 🧄 peeled and whole garam masala and salt cook the meat until tender for 1 hour

  2. 2

    Then separate the meat and yukhni in a bowl

  3. 3

    Now in separate pot add oil and sliced onion make it light golden

  4. 4

    Then add cooked meat and grinded green chillies paste and grinded garam masala stir it all together cook for 1 minute

  5. 5

    Then add rice and 5 cups yakhni for 4 cups of rice you have to add 5 cups of yakhni which we made before

  6. 6

    Now put on dum for 10 minutes before putting on dum in a separate frying pan add 2 tbspn butter and 1 tbspn oil and 2 tbspn of sugar saute the carrots and raisin

  7. 7

    Add half of the carrots and raisin on dum and rest some for garnishing

  8. 8

    Now after 10 minutes simmer open the lid toss all the rice and serve hot sprinkle some remaining raisin and carrots and peeled almonds for garnishing

  9. 9

    Enjoy hot Afghani pulao with green raita
