Ingredients

About 20 pieces
  1. 2medium zucchini
  2. 2eggs
  3. 3 1/2 ozfeta or ricotta cheese (about 100 grams)
  4. as neededAll-purpose flour,
  5. 1 teaspoonbaking powder
  6. 1 teaspoonvegetable seasoning (like Vegeta)
  7. Black pepper
  8. Plenty of dried mint
  9. 2 tablespoonsolive oil
  10. Vegetable oil for frying

Steps

  1. 1

    Grate the zucchini using the coarse side of a box grater. Sprinkle with salt and let them sit in a colander to release their liquid. For faster results, squeeze them by hand until well-drained.

    In a large bowl, combine the zucchini, eggs, olive oil, dried mint, crumbled feta or ricotta, vegetable seasoning, and black pepper. Mix well.

  3. 3

    Add the baking powder and enough all-purpose flour to make a thick batter that holds its shape on a spoon.

  4. 4

    Pour about 1/2 inch of vegetable oil into a skillet and heat over high heat until hot.

  5. 5

    Drop spoonfuls of the batter into the hot oil. Once golden on one side, flip to cook the other side.

  6. 6

    When done, transfer the fritters to a platter lined with paper towels to absorb excess oil.

  7. 7

    Serve with tzatziki or plain yogurt.
