Heat the oil in a wok, add the curry paste and stir fry for 1 minute until sizzling. Add the chicken and lime leaves and stir fry for 1 minute until they are evenly coated

Add the chicken stock, bring to the boil, cover and simmer for 15 minutes. Add the coconut milk, green beans, red pepper and fish sauce to the pan and simmer for a further 5 minutes.

Spoon into warmed bowls and serve topped with basil leaves, sliced red chilli and shredded lime leaves
