What can I do with so many lemons , is the question that comes to our minds when we see so many lemons lying in the fridge. There are a lot many recipes that can be made using lemons besides only for garnishing.
One such recipe is Lemon Cake ---- Indian Style.This cake is favourite in our house & we enjoy a slice of the cake with hot beverages.
Its origin dates back to England but here is an Indian version.

Sieve plain flour, baking powder & baking soda at least 3 times for everything to incorporate very well. Keep aside.

In a big bowl, take curds, powdered sugar, lemon rind, lemon juice & oil & mix with the help of a hand whisk.

Now slowly add the flour in small batches & mix well by cut & fold method, with a spatula.

Pour the batter in a greased loaf tin & tap it to remove air bubbles if any.

Bake the cake in a pre-heated oven at 180 c for 35 - 40 minutes.Cool the cake. Loosen the edges slightly with the help of a knife & demould the cake on a wire rack. Cut into thick slices & serve warm with tea / coffee.
