Ingredients

8 servings
  • For Dosa:
  • 250 gmsOr 1 1/2 cup Ragi
  • 1/2-1 cupidly rice
  • 1/3 cupurad dal
  • 1 tspmethi seeds
  • as neededSalt and oil and water
  • For Chutney:
  • 1grated coconut(fresh)
  • 1/2-3/4 cupdariya(roasted chana dal)
  • 3green chillies
  • as neededSalt and water
  • For tempering of chutney:
  • 2 tspoil
  • 1 tspRai,
  • 1tsp urad dal,
  • 1/4 tsp hing
  • 15-20 curry leaves

Steps

    Clean and wash the ragi well. Wash it 5-6times and soak for 12-15 hours.

    Then, drain and tie the soaked ragi tightly in a clean cotton cloth.

    Wait for at least 18 hours for ragi to sprout. This SPROUTED RAGI is a powerhouse of nutrition.(It ha 20 times iron content and 10 times calcium content than plain ragi)

    Meanwhile,wash and soak rice, urad dal and methi seeds for 6 hours.

    Now drain all the soaked ingredients and crush sprouted ragi and idly rice together, using water as needed.

    Transfer it to a bowl. Similarly, crush urad dal and methi seeds to a smooth paste using water as needed.

    Now, mix both the pastes and make a homogenous batter. Allow the batter to ferment overnight or 8 hrs.

    Prepare regular South Indian coconut chutney.

    Transfer to a bowl.

    Do the tempering for the chutney.

    After fermentation, mix the batter and take out the required quantity of batter in a smaller container. And store the rest of batter in fridge.Add in salt and water to the batter and set the batter to a dosa consistency.

    Season a dosa tawa and make sprouted ragi dosa using little oil. Make it crispy for the best ever tasting super healthy dosa.
