Place the stock and 1 tablespoon olive oil in a saucepan, bring to just boiling point, then pour over the couscous. Cover and set aside for 10 minutes.
Fluff couscous with fork. Cool a bit.

Cut cucumber, onion, capsicum, tomato in small pieces and chopped parsley. (Add nuts if u like)

Now take large bowl, whisk olive oil, honey, lemon juice, salt and pepper (can add lemon zest)
Now add all above ingredients, mixed it well and ready to serve. - 4
Couscous salad is ready to serve.
