California Farm Baked White Peach Puree

Our White Lady white peaches are ripe, and huge this year, over 350 grams each. The three biggest ones are selected for their pits, to grow a new tree. White peach trees only last eight years here, and take five years to produce, so we plant 3 sprouted pits in a planter pot every year for our mini orchyard. The pits take half a year in the fridge to sprout.
An easy way to process the ripe fruits is to bake the whole fruit, unpeeled, unpitted, in the air fryer oven for 45 minutes at 400 F degrees, and puree it. They also taste great fresh and make a great marmelade, see our Golden Jam recipe in here.
The puree is served as a topping, one Tablespoon at a time, over grilled chicken or pork, like apple sauce. After a few days in the fridge, we freeze any leftover puree in ice cube trays for winter use over grilled chicken, pork, on yoghurt and in cakes.

Rinse and put four white peaches upside down on baking tray in oven. Peaches will not burst upside down when cooking juices can escape through the stem. Bake till skin puffs up, about 45 minutes at 400 F degrees. Let cool.

The skin of the peach and the pit will be loose and remove easily, as will the baked on bottom. Put skins in worm bin, pits in garden fermenter. Quarter peaches and puree in your food processor. Put puree in small mason jars in the fridge.

To taste, put tablespoon of puree over bowl of greek yoghurt for breakfast or over porkchop for dinner.

After a few days in the fridge, put leftover white peach puree in ice cube container with lid, mark and freeze. Use all winter till next years crop.

You need pits from fresh ripe fruit for planting. To plant white peach pits to grow your own tree, scrub fresh peach pits clean so mold cannot grow on them, lay on wet paper towel in ziplock bag in fridge from mid summer to mid spring. When they start to sprout in early spring, put in potting soil in window sill indoors. After danger of frost has passed, plant three seedlings outside in one planter pot, watch them grow.
