Steps
- 1
Wash the blueberries and place them in a small saucepan with the sugar and lemon juice. Cook over medium heat until the blueberries soften. Mix the cornstarch with water and pour it into the blueberry sauce, stirring continuously to prevent lumps. Cook until the sauce thickens. The blueberries don't need to be fully jam-like. Let the sauce cool and set aside.
- 2
Pour the milk into a small pot and heat until small bubbles form around the edges. Turn off the heat and stir in the butter until fully melted. Let it cool slightly (about 5-8 minutes). If the milk is too hot, it will affect the dough's rising.
- 3
In a large mixing bowl, combine the flour, sugar, salt, and yeast. Add the milk, egg, and water, and mix into a dough. Since flour absorption varies, add water gradually. The dough will be sticky at first, so using an electric mixer with a dough hook is recommended.
- 4
Continue kneading the dough until it easily pulls away from the bowl's sides. The dough should be soft, elastic, slightly sticky, but not sticking to your hands. Shape it into a ball, cover with plastic wrap or a warm damp cloth, and let it rise in a warm place for 40-60 minutes, or until it doubles in size.
- 5
Sprinkle some flour on the work surface and transfer the risen dough onto it. Roll the dough into a rectangle about 12 x 9 inches (30 x 23 cm). Brush 1 tablespoon of softened butter evenly over the dough, leaving a 1/2 to 3/4 inch (1.5-2 cm) border on one long side for easier sealing.
- 6
In a bowl, mix the sugar and cinnamon, then sprinkle evenly over the dough. Use a sieve for even distribution. Spread about 1/2 cup of blueberry sauce over the dough. Reserve the remaining sauce for decoration.
- 7
Roll the dough tightly towards the unbuttered edge and seal the seam. Trim uneven ends and cut into 12 equal pieces. Place the rolls on a baking sheet lined with parchment paper, leaving space between each. Cover with plastic wrap and let rise again for about 30 minutes until doubled in size. Preheat the oven to 350°F (180°C) while the dough rests.
- 8
Bake the risen rolls for 18-20 minutes, or until the tops are lightly golden. Remove from the oven and let cool slightly. The cinnamon rolls are now ready, but if you want to add lemon icing, let them cool completely first.
- 9
For lemon icing, mix the powdered sugar, milk, and lemon juice in a small bowl until smooth. Drizzle over the cooled cinnamon rolls. Besides the icing, I also drizzled some of the remaining blueberry sauce over the rolls.
- 10
Note 1: You can substitute brown sugar for the sugar in the cinnamon filling.
- 11
Note 2: If you want to add lemon icing but don't want to buy powdered sugar, you can grind regular sugar into a powder using a coffee grinder or food processor.
