Pulled Pork Tacos

Pulled Pork is shredded pork cooked American-style. You can serve it on its own, use it in sandwiches, fill tortillas for tacos or burritos, make quesadillas, fajitas, or even stuff it in pita bread like a kebab. In this recipe, we use it to fill tacos.

Pulled Pork is shredded pork cooked American-style. You can serve it on its own, use it in sandwiches, fill tortillas for tacos or burritos, make quesadillas, fajitas, or even stuff it in pita bread like a kebab. In this recipe, we use it to fill tacos.

In a bowl, combine all the marinade spices, brown sugar, and water. Mix well. Rub the marinade all over the pork, place it in a covered container, and refrigerate for at least 4 hours, ideally overnight.

Prepare the beef or chicken broth and set aside.

Once the pork is well marinated, cook it in a pressure cooker. First, sear the pork: heat 2 tablespoons of olive oil in a skillet, then brown the pork on all sides to seal in the juices.

When the pork is well browned, transfer it to the pressure cooker with the broth and the onion cut into chunks. Add more water if needed to cover the meat. Close the cooker and cook until the pork is very tender, about 30 to 40 minutes (cooking time may vary depending on your pressure cooker).

Once done and you can open the cooker, remove the pork and shred it. While shredding, simmer the cooking liquid to reduce and thicken it.

In a large skillet, add the shredded pork and the thickened cooking liquid. Cook over medium-high heat for about 5 minutes. Add the barbecue sauce.

Mix well and cook for a couple more minutes. If the sauce is too thin, let it reduce further. Your pulled pork is now ready.

Fill the taco tortillas with the pulled pork and enjoy. I added cherry tomatoes and sour cream, and they turned out great.
