Potato, Egg, and Vegetable Casserole

Wash and slice the potatoes thinly. Place them in a microwave-safe dish with salt, rosemary, and a drizzle of olive oil. Microwave at 750W for 8 minutes.

Weigh out the frozen mixed vegetables (without legumes), add salt, and microwave at 750W for 10 minutes.

Add two eggs to the partially cooked vegetables and mix well.

Layer the potatoes on the bottom of a dish, pour the vegetable and egg mixture over them, then add another layer of potatoes on top. Microwave at 750W for a final 2 minutes.
