This is a classic Japanese appetiser and I loved it.
Steps

Wash the Shitake mushrooms and cut the stems with a sharp knife. Sprinkle potato starch on the inside of the Shitake mushrooms, set aside

In a bowl add minced meat, finely chopped spring onions, finely chopped ginger, 1 Tbsp potato starch, salt and mix well
- 3
Take a lemon size minced meat filling and place it on the Shitake mushrooms that is coated with potato starch and press to firm it

In a wok heat oil and place the Shitake mushrooms filled in on the oil and fry on medium flame for 2-3 mins, flip sides and fry for 1 min
- 5
Add the Merin, Sake, dark soya sauce and sugar and cook for 2 mins to form the sauce, set aside
- 6
Plate and enjoy this appetiser
