Cooking Instructions

In a large bowl, combine beef, garlic, onion, bay leaves (If using) peppercorns, brown sugar, and soy sauce. Marinate for an hour or overnight in the fridge.

Place beef in large pot or wok and pour water then simmer on a low heat for 40 minutes or until beef is tender.

Pour vinegar and simmer for another 5 minutes then season with salt and sugar according to taste.

Cook until the sauce is almost absorbed and start to render oil.
- 5
Transfer to a serving plate then serve with white rice.

Savory and darkly colored from the reduction of soy sauce. I've added a few non traditional ingredients like xiaoxing, red pepper, onions, and some gelatin to give the reduction body, but I assure you the additions are worth it.
