Vegetarian Tacos 🌮 (with TVP)

TVP or texturized vegetable protein is the preferred ingredient for many vegetarians. Is it made of soy* and it's a great source of protein and fiber. Today I used it as a taco base but it can also be used in stews, pastas, burgers and much more !

Where to find TVP: Sprouts, Whole Foods, Asian market stores, Amazon and some Walmarts.

*I encourage to purchase non-GMO TVP to emphasize the quality and taste of the the product.

Ingredients

30 minutes
3-4 servings
  1. 1 cupTVP
  2. 2-4soft taco tortillas
  3. 2 tbsptaco seasoning
  4. 2 tbsptomato paste
  5. 1 cupwarm vegetable broth or water
  6. 3 tbspolive oil
  7. Toppings (desired amount)
  8. Sauce of your choice (taco sauce, Chipotle sauce...)
  9. Shredded lettuce
  10. Tomatoes
  11. Shredded cheese (Mexican mix or mozzarella- provolone mix)

Steps

30 minutes
  1. 1

    Assembly ingredients and preheat oven to 475°F.

  2. 2

    In a container, add the TVP and 1 cup of warm vegetable broth or water. Cover with a lid and let it sit for 10-15 minutes, or until the TVP has expanded and absorbed most of the liquid.

  3. 3

    Once most the liquid has been absorbed, heat up over medium heat a pan and add 3 tbps of olive oil. Add TVP and some of the liquid. Stir for 1 minute.

    Add 2 tbsp on taco seasoning, and tomato paste and mix. Lower heat, cover and let it soak up all the flavors for 5-7 minutes, constantly stirring.

    Remove from heat and set aside.

    Once the oven has been preheated, warm up tortillas (2-4 minutes)

  7. 7

    Get a plate and start with a warm tortilla, taco sauce of choice, TVP, tomatoes, lettuce, and top off with shredded cheese.

    Serve with a side of buttery white rice and enjoy!
