Shrimp with Shiitake Mushrooms, Chinese Eggplant, and Chinese Noodles

These shrimp are cooked and served with shiitake mushrooms, Chinese eggplant, bell peppers, Chinese noodles, and a delicious soy and Chinese oyster sauce.

These shrimp are cooked and served with shiitake mushrooms, Chinese eggplant, bell peppers, Chinese noodles, and a delicious soy and Chinese oyster sauce.

Peel and devein the shrimp. Make a cut along the back of each shrimp and remove the vein, rinsing under cold water. Boil the shrimp shells in 1 1/4 cups of water and save the liquid to use for the sauce.

In a pot of boiling water, cook the Chinese noodles according to the package instructions (about 5 minutes). Set aside.

MAKE THE SAUCE: Mix the cornstarch into the shrimp stock until smooth. Add the remaining sauce ingredients and stir to combine.

COOK THE SHRIMP AND VEGETABLES: Heat the vegetable oil in a wok and cook the shrimp on both sides until pink, being careful not to overcook. Transfer to a plate.

In the same hot wok, sauté the onion with the garlic and ginger. Add the sesame oil and stir-fry the vegetables. If the vegetables start to burn, add 1 tablespoon of water to create steam. Cook until just tender-crisp.

Add the sauce and let it thicken. Add the shrimp and Chinese noodles, and toss to combine.

Serve immediately.
