Ingredients

  1. 1 lb (454 grams)peeled and deveined shrimp
  2. 2 tablespoonsvegetable oil
  3. 1/2onion, diced
  4. 1 teaspoonminced ginger
  5. 2 clovesgarlic, minced
  6. 1 tablespoonsesame oil
  7. 5 ounces (145 grams)shiitake mushrooms, sliced
  8. 7 ounces (190 grams)Chinese eggplant, sliced
  9. 1/2green bell pepper, diced
  10. 1/2 cupred bell pepper, diced
  11. 1green onion, thinly sliced
  12. Sauce:
  13. 1 1/4 cupsshrimp stock (made from shrimp shells)
  14. 1 tablespooncornstarch
  15. 1/4 cupsoy sauce
  16. 1/4 cupChinese oyster sauce
  17. 1 tablespoonhoney
  18. 1 tablespoonrice wine
  19. 1/4 teaspoonsalt
  20. 1/4 teaspoonground black pepper

Steps

  1. 1

    Peel and devein the shrimp. Make a cut along the back of each shrimp and remove the vein, rinsing under cold water. Boil the shrimp shells in 1 1/4 cups of water and save the liquid to use for the sauce.

    In a pot of boiling water, cook the Chinese noodles according to the package instructions (about 5 minutes). Set aside.

    MAKE THE SAUCE: Mix the cornstarch into the shrimp stock until smooth. Add the remaining sauce ingredients and stir to combine.

    COOK THE SHRIMP AND VEGETABLES: Heat the vegetable oil in a wok and cook the shrimp on both sides until pink, being careful not to overcook. Transfer to a plate.

    In the same hot wok, sauté the onion with the garlic and ginger. Add the sesame oil and stir-fry the vegetables. If the vegetables start to burn, add 1 tablespoon of water to create steam. Cook until just tender-crisp.

    Add the sauce and let it thicken. Add the shrimp and Chinese noodles, and toss to combine.

    Serve immediately.
