I’m in Alicante 🇪🇸 and had the most incredible “Alcachofas a la plancha” in a local restaurant. Fortunately mi amigo @jesseclark was on hand to help me recreate this amazing dish at home.

Cooking Instructions

Source your artichokes.

Trim the stem by about half. Turn the artichoke around and cut off the top 1/3. The trick is to remove any woody or tough parts so only the soft leaves and heart remain.
If you’re not cooking these right away, add the prepared artichokes to a bowl of lemon water to stop them oxidising. We didn’t have lemon so made do with sherry vinegar (white wine vinegar also works!)

You will end up with quite a bit of discard. Fear not, because you’ll be left with the most delicious and tender part of the artichoke.

Steam until the heart is tender when pressed with a fork.

Once tender, press the artichokes with your hands to flatten them a little ready for grilling.

In lieu of a flat grill we used a nonstick frying pan with a little oil. Cook on medium-high heat on both sides.

Enjoy the best way to eat artichokes. Serve with lemon if you have some and season to taste. 👌

My mother-in-law made this artichoke dish for me before her son and I got married. I heard that my husband really liked artichokes, so I wanted to learn how to cook them. I was happy that I was able to make the sauce on my first try, because it's difficult -- even my mother-in-law has messed it up a few times.It's important to keep stirring the sauce while cooking it over very low heat. Raising the temperature or not stirring it constantly will result in separation or clumps. Stirring with a whisk works great.
