Japanese brioche made with tangzhong is a soft and light pastry.
Steps

Combine all the tangzhong ingredients and mix well. Cook over medium heat, stirring constantly, until you get a thick paste. Place in a container with a lid and let cool.

Mix all the brioche dough ingredients together and knead for 10 minutes on medium speed.

Shape the dough into a ball, cover, and let rise for 1 hour.

Punch down the dough and divide it into 6 pieces. Shape each piece into a ball and place them in a baking dish.

Place the brioche in a turned-off oven with a bowl of hot water. Let rise for 1 hour.

Remove the brioche and brush with milk. Bake for 35 minutes at 320°F (160°C).
