  1. Tangzhong
  2. 2 tablespoonsflour (15 g)
  3. 2 1/2 tablespoonswater (35 g)
  4. 2 1/2 tablespoonsmilk (35 g)
  5. Brioche Dough
  6. The tangzhong
  7. 1egg
  8. 0.9 ouncefresh yeast (25 g)
  9. 2 cupsflour (260 g)
  10. 1/4 cupsugar (50 g)
  11. 1 1/2 tablespoonsbutter (20 g)
  12. 1/3 cupmilk (80 g)
  13. Other
  14. 1little milk

    Combine all the tangzhong ingredients and mix well. Cook over medium heat, stirring constantly, until you get a thick paste. Place in a container with a lid and let cool.

    Mix all the brioche dough ingredients together and knead for 10 minutes on medium speed.

    Shape the dough into a ball, cover, and let rise for 1 hour.

    Punch down the dough and divide it into 6 pieces. Shape each piece into a ball and place them in a baking dish.

    Place the brioche in a turned-off oven with a bowl of hot water. Let rise for 1 hour.

    Remove the brioche and brush with milk. Bake for 35 minutes at 320°F (160°C).
