As promised earlier, I attempted rice cake two ways. First with blended soaked rice and second with dry rice crushed into flour. I’d had this one sitting in my drafts and the motivation I needed to post it just arrived, #GoldenApron23

Blend rice in a high power coffee grinder until formed into a powder. Sift flour and repeat grinding on all large particles of rice. It will take several repeat grindings to achieve a closer to fine outcome and reduce the grittiness of the final cake

Whisk wet ingredients together

Mix rice flour into wet mixture

Mix in flour coated raisins, top with more raisins and transfer into a baking pan
- 5
Bake in a preheated oven at 180C for 30 minutes or until cooked through

Cool on a rack or enjoy warm
