In a pan add water and bring it to boil, add udon noodles, boil for 2 mins and drain, add to a serving bowl

Mince garlic, chop spring onion greens. Chop cucumber fine

In a pan heat oil, add minced garlic stir for 1 min, add chilli flakes, add spring onion greens (half) and stir for 45 seconds, set aside

In a bowl add brown sugar, soy sauce and dark soy sauce and mix well

To the serving bowl add the soy sauce mix, toss well, add the spring onion chopped mix and mix well.

To serve, add chopped cucumber on the side, the chopped spring onion green as garnish and enjoy
