This is the recipe from my grandma, who loves castella and used to make this for me. This is just the right size as a gift.

Preheat the oven for 180°C (350°F). Separate the egg whites and yolks.

Whip the egg whites while adding the sugar a little at a time.

Add the egg yolks to Step 2, and mix well. Add the honey and mix some more.

Add the bread flour to Step 3, and fold in to blend well.

Pour the batter into a mold, and tap it several times on the counter to eliminate any air bubbles.

Bake it for 10 minutes at 180°C (350°F). Turn down the heat to 150°C (300°F) and bake it for another 20 minutes.

When it's baked, wrap with plastic wrap. Let it sit for a day before enjoying it to make the cake even more moist.
