Ingredients

20-25 servings
  1. 3 kgMutton, beef, lamb or chicken
  2. 3 cupsoil
  3. 3medium sized onions (thinly sliced)
  4. 3tblsp kashmiri red chili powder
  5. 3tblsp red chili powder
  6. 3 tspWhite cumin seed powder
  7. 6tblsp ginger garlic paste
  8. 3tblsp salt or as required
  9. 1& 1/2 tsp turmeric powder
  10. 3/4 tspcitric acid (tatri)
  11. 3 tspdried ginger powder (sonth)
  12. 1& 1/2 cup plain yogurt (lightly beaten)
  13. 20-24 cups(mutton, beef, lamb or chicken bones stalk)
  14. For the gravy
  15. 2& 1/4 cups all-purpose flour mix with 2 cups of water
  16. For Nehari Masala
  17. 3tblsp fennel seeds (sonf)
  18. 3tblsp whole coriander
  19. 3 tspwhole black pepper
  20. 3 tspWhole white cumin seeds
  21. 1& 1/2 tsp clove
  22. 3small pieces of nutmeg
  23. 3 piecesmace
  24. 6small sticks of cinnamon
  25. 15whole green cardamom
  26. 6star anise
  27. 3 pieceswhole long pepper (pipli)
  28. For the garnishing
  29. Fresh ginger julienne cut as required
  30. Fresh lemons cut into small pieces as required
  31. Fresh coriander finely chopped as required
  32. Fresh green chillies finely chopped as required

Cooking Instructions

    Place all the #nehari_masala ingredients into the grinder and make a fine powder and set it aside.

    In a cooking pot, add oil, onion, and fry until light brown.

    After that add ginger & garlic paste and cook until light brown.

    Now add, meat, fry until light brown. Add salt, cumin powder, kashmiri chili powder, turmeric powder, red chili powder, citric acid (tatri)
    dried ginger powder (sonth) add little bit of water if you need and cook for 4-5 minute. Add yoghurt cook more 7 to 8 minute.

    Now add meat stalk with #nehari #masala_powder (when we grind earlier) and cook in a pressure cooker or in a non-stick pot until meat is really tender.

    When the meat is cooked, remove as much oil as possible then set it aside.

    After that add flour mixture in batches for however much curry you need, thick or thin. Then cook for 20-25 minutes more.

    Before serving add the oil (when we are remove earlier) on top of the nehari, then sprinkle some ginger coriander and green chillies on top.

    Your tasty Beef Nihari is ready and serve with naan, ginger, fresh coriander, green chillies and lemon.

    #Tip:

    You can used 1 & 1/2 cups of store bought fried onions and crushed by hand or pulse few times in a food processor and good to go.
