Place the butter and sugar in the mixer. Blend until you obtain a whitish paste. Add the vanilla, cinnamon and egg and beat well.

Add the flour to the dough little by little, mixing with your hands until combined. The dough should completely come away from the bowl and your hands.

Roll out the dough between two sheets of baking paper or two pieces of plastic. Place in the freezer for 20 minutes.

With a glass or cookie cutters, cut out the desired shapes. Transfer everything to a non-stick baking tray and place in a preheated oven at 180˚°C for 10~15 minutes. Let it cool completely and then remove it from the mold.
