Ingredients

  1. 1/3 Cpeanut butter
  2. 1/3 Ccrushed roasted peanuts (pic)
  3. 1small brown onion (see pic)
  4. 1 tbspKorean chili paste (Gochujang - see pic)
  5. 1 tbspsugar
  6. 1 Cwater
  7. 1/3coconut milk/coconut cream
  8. 1/2 tsplemongrass powder
  9. 1/4 Ccooking oil
  10. Salt to taste

Cooking Instructions

  1. 1

    Prep all ingredients:
    1. Crush store-bought roasted peanuts - make 1/3 C
    2. Finely chop onion - chili in the pic is optional
    3. Gather and measure the rest of the ingredients

    Heat 1/4 C cooking oil. Sauté onion until translucent. Add lemongrass powder and Korean chili paste (gochujang).

    Stir for a minute. Add 1 C of water. Leave to sizzle lightly. Add crushed peanuts, peanut butter, 1 tbsp of sugar and and pinch of salt.

    Next, add AYAM BRAND coconut milk or coconut cream. Leave to simmer over low heat for 5mins. Stir to mix. Taste and adjust seasonings accordingly. Turn the heat off and serve with steamed veggies, bbq meat or teamed glutinous rice.

    Variations:
    1. Crush peanuts to your preferred texture.
    2. Add extra chili flakes for added heat.
    3. Blend onions for a smoother sauce. Blend with a teaspoon of chopped lemongrass if you don't have lemongrass powder. You can also add dried shrimps.
    4. Use any kind of peanut butter. Adjust sugar and salt accordingly.
    5. Add water according to how thick or thin you want your sauce to be. The sauce thickens as it cooled. You can add more coconut milk or adjust the water.
