Navajo Fried Bread 2023

This recipe came about, do, to the fact, that 144 years ago the Navajo people living in Arizona, were forced on "The Long Walk", to New Mexico. There the beans and vegetables they were used to eating could not be grown at that time. So they were given army rations. So with the rations that they were given this recipe came about. Now I added the garlic, onion flakes and paprika but other then that, it's basically what they made.

Ingredients

12-14 servings
  1. 6 cupsself rising flour
  2. 2 cupswarm water
  3. 2 teaspoonsalt divided
  4. 1 teaspoongranulated garlic powder
  5. 1 teaspoonground paprika
  6. 1/2 cupdehydrated onion flakes
  7. As neededpeanut oil to fry with
  8. As neededmargarine to brush the top of each fry bread

Steps

    Heat the water till warm, adding in 1/2 teaspoon salt. Mix the rest of the salt with the flour in a bowl. Add the dehydrated onion flakes, garlic, and paprika. Add the water and incorporate very good.

    Now the dough is a sticky warm mess. Lightly flour the dough, separate into small balls, and roll out individually. Stack them up using waxed/ butter paper in-between each flatbread. Use the rolling utensil to roll a bit of the flatbread around the utensil to help lift onto the papers. Set the uncooked, rolled out flatbread into the refrigerator till ready to fry. They are easier to handle, when putting them into the hot oil to fry.

    When you are ready to fry them heat the oil and start frying them. Move them to paper towels to absorb excessive amounts of oil. Brush on margarine on the top of each.
