Firstly, to boil the chicken, in a cooking pot add the chicken breasts, salt and water. Cover and boil for 15 minutes on low flame. Transfer the boiled chicken on to a plate and allow it to cool. Shred the boiled chicken and set it aside. Reserve the chicken stock for later use.

Assemble the required ingredients.

In a small cooking pot add the eggs, water and salt and boil it. Transfer the boiled eggs into a bowl of cold water. Remove the shell and set it aside. Slice it roughly when required to be added.

In a small bowl, add all the spice powders mentioned above. Add 1/2 cup water and make a paste. Set it aside.

Assemble the required ingredients.

To make the cashew paste, in a small bowl add the cashewnuts and lukewarm water and let it soak for 15-20 minutes. Transfer it to a blender and blend it into a smooth paste. Transfer it in a bowl and set it aside.

In the same blender, add the chopped tomatoes and blend it into a smooth paste. Transfer it in a bowl and set it aside.

Finely chop the onions and the shallots together in an electric mini chopper. Transfer it on to a plate and set it aside. Chop the green chillies when required to be added.

Dry roast the kasuri methi. Transfer it into a blender and blend it into a fine powder.

To begin with the process of making “Dhaba Style Chicken Bharta”, heat oil in a kadai. Add the whole spices ie. green cardamom, cinnamon, cloves and the whole black peppercorns and saute for few seconds.

Add the finely chopped onions and shallots and saute on medium flame until slightly golden brown.

Add the spice paste and saute on medium flame until the oil separates.

Add the ginger garlic paste and saute on low flame until the oil separates.

Add the tomato puree, the chopped green chillies and salt and saute on medium flame until oil appears at the surface.

Reduce the flame to low and add the cashew paste and mix it well. Add the whisked yogurt and mix it well. Continue to saute on low flame until oil appears at the surface.

Add the boiled and shredded chicken, homemade garam masala powder and salt and mix it gently.

Add the chicken stock and mix it well.

Add half cup of hot water and cover and cook on low flame until the oil separates.

Add the fresh cream and mix it well. Add the dry roasted and powdered kasuri methi and mix it well. Cook on low flame for few more minutes. If the consistency is thick, add more water.

Add the roughly sliced boiled eggs and mix it gently. Cook for few more minutes.

Garnish with butter and the chopped coriander leaves. Mix it well and serve it immediately.

Delicious Dhaba Style Chicken Bharta is ready to serve. Enjoy it hot with roti, paratha, naan, or hot steamed rice.
