Eggless, Meatless Macrobiotic Silken Tofu Hamburger

I wanted to use up a whole block of tofu. There wasn't much I could eat while I was pregnant. I wanted something that I could eat even when I had morning sickness. So I used macrobiotic ingredients and cooking methods which don't harm your body.
Kudzu starch is very good for your intestines, but if it isn't cooked properly it won't be digested well. So it's important to steam-cook it with a lid. For 4 servings. Recipe by moriam

Cooking Instructions
- 1
Lightly drain the tofu. Mince the carrot and onion.
- 2
Flavor the carrot and onion with a pinch of salt and cook through with a small amount of water (water saute).
- 3
Use a blender to grind up the kurumabu or dried wheat gluten.
- 4
Smash the drained tofu and mix in the kudzu starch.
- 5
Combine the ingredients from Steps 2, 3, and 4. If it seems too loose, add panko as needed. Mold it into a hamburger shape.
- 6
Heat some oil in a frying pan, and steam-cook the hamburger with a lid.
- 7
Thoroughly brown both sides to make sure the kudzu has cooked, and it's complete!
- 8
For the sauce, it's common to combine ketchup and Worstershire sauce, but instead combine some ketchup with a little miso. The miso will counteract the bitterness of the tomato. It's also a little bit better for your body.

Meat-Free Silken Tofu Hamburger Meat-Free Silken Tofu Hamburger
I wanted to try making a hamburger from tofu. I wondered what the hamburger would be like if I used silken tofu, so I came up with this. It was surprisingly easier to make compared to a meat hamburger and it beat the flavor!Don't be stingy with the panko! Make sure to use the same amount as the tofu! Unlike meat, even they burns a little, they will still smell and taste great. Just cover up the burned part with sauce! I always eat them with teriyaki sauce (soy sauce, sugar, mirin, katakuriko dissolved in water, and ground sesame seeds). If you are making these for two, you could use all 3 of the smaller 3-block tofu packs that you often see. Use the same amount of panko as the tofu, one small onion, and one egg (the size of the egg doesn't matter). It's also fine to use firm tofu instead of silken tofu. Recipe by CNA cookpad.japan -
Meatless Teriyaki Tofu Hamburger Patties Meatless Teriyaki Tofu Hamburger Patties
I wanted to feed my 2 and a half year old daughter healthy food, so I came up with this. When I make it at home I usually I just eyeball the amounts. It makes me so happy to see my child eating her meals with gusto. My wife likes it too!It may look like there are a lot of steps but there really aren't. By freezing it, the moisture in the konnyaku drains away, making it more chewy. And by parboiling it, its unique smell goes away. If you want to freeze these burgers please sauté the onion. If you make them into bite sized burgers they'll be perfect for bentos. For 4 servings. Recipe by Usajisan cookpad.japan -

My Secret Tofu Hamburger My Secret Tofu Hamburger
I happened to have some tofu and mixed ground meat one day. I wanted to make a tofu hamburger out of them but I felt too lazy to drain the tofu. Then I thought, "Maybe I can just let the panko absorb the excess moisture". And to my surprise, it turned out to be even more delicious than my usual tofu hamburger! I could barely tell it contained tofu and yet it was still soft and juicy. I've been making this version ever since. Please let the panko absorb all the liquid after making the tofu into a paste. Knead and mix well until it becomes sticky. Steaming the hamburger makes it soft in texture. It's also good with grated daikon and ponzu. Recipe by Yumikoro. cookpad.japan -
