Gajar / Carrot Halwa in pressure cooker

In winters we make carrot halwa very oftenly. It's one of quintessential winter dessert especially in North India and is rich and decadent. I tried this recipe differently. But the taste is awesome!!! 🥰

In winters we make carrot halwa very oftenly. It's one of quintessential winter dessert especially in North India and is rich and decadent. I tried this recipe differently. But the taste is awesome!!! 🥰

Steps

Select tender Carrots for making halwa. Wash carrots for couple of times. Then peel off outer thin layer of carrots with knife. Chop carrots with knife into small pieces. Cut it's end green part. If there is white part at the centre of carrot, remove it & cut carrots into medium sized pieces.

Heat ghee in pressure cooker. Add chopped carrots into heated ghee. Stir carrots into ghee until it's raw flavor evaporates. Then add sugar. Continue to cook the gajar stirring constantly until the sugar melts. Once it melts completely put cooker lid & make 3 whistles. Then simmer for 5 min. Turn flame off. Wait to release steam of pressure cooker.

After 30 minutes, remove cooker lid. Drain the sugar syrup/ water into any cup. Mash cooked carrots with masher. Mash until it makes soft. Once done, turn gas on, place cooker again on heat. Add the strained sugar syrup/ water into cooker. Continue cooking on low heat.

Add milk, milk malai, & milk powder into cooked & mashed carrots. Cook & stir continuously.
Simmer till the gajar ka halwa mixture starts to thicken and reduces more. Stir at intervals. - 5
Meantime heat ghee in another little pan. Fry chopped cashews & almonds. Pour fried nuts on cooked halwa. Add cardamom powder. Stir well. Delicious Carrot halwa is ready. Serve delicious gajar halwa at dinner or lunch as a dessert.
