Prepare the ingredients. Rub the boneless chicken thighs with a little salt and black pepper, and let marinate for about 10 minutes.

Bring 4 1/4 cups water (1000 ml) to a boil. Add 2 small cubes of curry roux, stir to dissolve, and set aside.

Peel and dice the onion, then set aside.

Peel the potatoes and slice them into thin pieces about 1/8 inch (0.3 cm) thick.

Fill a pot halfway with water and bring to a boil. Add the potato slices and cook for about 8 minutes, until tender and easily pierced with a fork. Remove the potatoes and set aside.

Add the boneless chicken thighs to the same boiling water used for the potatoes. Once the chicken changes color, remove it from the water.

Rinse the blanched chicken briefly under water, pat dry with paper towels, and cut into bite-sized pieces.

Bring a pot of water to a boil and cook the small tangyuan (glutinous rice balls).

Once the tangyuan are cooked, remove and set aside.

Heat oil in a pan and sauté the diced onion until soft and translucent.

Add the chicken pieces to the pan and stir-fry with the onions for about 2 minutes.

Add enough water to cover the ingredients, cover with a lid, and simmer for 5 minutes.

Add the prepared curry sauce to the pan and cook with the chicken.

Simmer over medium-low heat for about 15 minutes, until the chicken is flavorful, then turn off the heat.

Prepare serving bowls and add a portion of tangyuan to each.
