Steps

Prepare ingredients in A:
Cut chicken into chunky bite size. Peel and Quarter potatoes. Keep aside. - 2
Prepare ingredients in B:
Add 1 cup of BABA'S meat curry powder and 2 tbsp of BABA'S fish curry powder in a bowl. Add 1 cup of water and mix until you have a thick curry paste. Keep aside. - 3
Prepare ingredients in C:
Peel and roughly cut brown onion, red onion and garlic. Place in a blender, add 5 Candlenuts and 1/3 cup of water. Blend until smooth. - 4

Cooking chicken curry 👇🏻 :

Add 2/3 C of cooking oil into a heated wok. When oil is already hot, add cinnamon sticks and star anise. Leave to infuse in hot oil for around 30 secs.

Gently pour blended onion paste into hot oil. Cook until aromatic or, for at least 5-6mins over medium heat. Keep stirring in between. Be careful as this oil tends to pop or splash.
Why this step is important?
As heat softens the structure of the onions, the fat not only captures the flavors being released, but also contributes to new flavors being formed through the process of browning. Sautéing adds deeper flavors and richer colors to the finished dish. - 8
Stir in the curry paste. Stir and mix everything well until well-combined. Add 1/4 cup of cooking oil. Over medium high heat, keep cooking and stirring for at least 10-12mins. Stirring often is to prevent burning your paste and sticking to the wok/pan. This is another important step, as the paste is raw. Cook until your curry paste is aromatic and the paste is looking like it's separated from the oil.

Then, add chicken and potatoes. Stir for 1 min. Pour in 1 1/2 cup - 2 cups of water. Stir to mix.

Add 1 piece/slice of small tamarind peel. Stir and cover for 5-6mins. Season with 2 tsp of chicken seasoning powder or chicken bouillon. Cover again for another 10mins or until potatoes are fully cooked or fork tender. (Dont forget to stir, every now and then)
👉🏻 Alway Check your potatoes, making sure they are soft, before adding coconut cream.

Finally, Add 270ml of AYAM BRAND coconut cream. Stir to mix. Leave to cook over medium heat for another 5 mins. Stir, taste and add or adjust salt accordingly, then turn off the heat right away. Serve over rice, with bread, flat breads or paratha.
