Wash well the inwards,then boil it for 30 mins with ginger,vinegar and salt.

After 45 mins or more wash it well again.

Heat pan with oil.Then sautee ginger,chilli and shallots until soft.

Then add pig inwards and keep stirring until golden brown and a little bit crispy.

Then add the sauces and a little water.Simmer it.
