Firstly, assemble all the ingredients required to make “Matar Mushroom Butter Masala“. Grind the cashewnuts into powder. Chop the veggies.

To clean the mushrooms, add water in a cooking pot and bring it to boiling point. Switch off the flame and add the mushrooms. Let it soak for 2 minutes. Drain the water and rinse the mushrooms in clean water 3-4 times. Drain it completely. It it now ready to use.

For marination, in a large mixing bowl, add the whisked yogurt, roasted and powdered kasuri methi, turmeric powder, black pepper powder and homemade garam masala powder and mix it well. Add the mushrooms and the matar/peas and mix it well. Cover and keep it aside for 10 minutes.

To make “Matar Mushroom Butter Masala”, heat oil in a pan. Add the cumin seeds, green cardamom, cinnamon stick and cloves and saute for 30 seconds. Add the finely chopped onions and salt and fry the onions on medium flame until the onions turn light golden.

Add the chopped green chillies and saute for 30 seconds. Add the ginger garlic paste and saute for few minutes. Add the kashmiri red chilli powder and saute for few seconds.

Add the turmeric and coriander powder and saute for few seconds. Add little water and continue to saute until oil appears at the surface.

Add the finely chopped tomatoes, butter and salt and mix it well. Cover and cook on low flame for 4-5 minutes, until oil appears at the surface.

Increase the flame to high and add the marinated mushrooms and matar. Mix it well. Cover and cook for 4-5 minutes, until oil appears at the surface.

Add the cashew powder and mix it well.

Add half cup of water and mix it well. Cover and cook on medium flame for 4-5 minutes, until oil appears at the surface.

Add the chopped coriander leaves and mix it well. Cover and cook for 2 minutes.

Delicious and Flavorful Matar Mushroom Butter Masala is ready. Serve it hot with butter paratha, roti, naan etc.
