My neighbors are Wintu Tribe and gave me this recipe for making dried Pemmican from beef, a mixture of lean beef, beef fat, and blueberries. They have taken this food on extensive hunting and fishing trips for generations. Stays fresh at room temperatures for years. Two quarter pound pemmican patties a day provide enough food per person per day. For drying the meat and the blueberries, I use sun in summer, and in winter I use my air fryer oven, it has a dehydration setting. Pemmican tastes good, chewed like beef jerky.

Ingredients

Week to dry, hour to make
2 people, 16 meals
  1. 1 1/2 PoundLean beef, trimmed
  2. 1 1/2 PoundBeef tallow
  3. 12 Tbsdried blueberries (3/4 pound dry, 1 1/2 pound fresh)
  4. No other equipment needed than a cast iron pan, but I used hand slicer, air fryer with dehydration cycle, food processor, screw rings from mason jars and parchment paper, and storage can
  5. Cost: beef $6, beef tallow $2, blueberries $4, $12 for 16 quarter pound pemmican patties, 75 cents per meal

Cooking Instructions

Week to dry, hour to make

    Slice lean beef 1/4” thick. Carefully remove all fat and silverskin.

    Dehydrate, Hang to dry overnight in air fryer till brittle, 12 hours

    Lay single layer of fresh blueberries on tray, dry 7 days in air fryer dehydrator in winter, or 7 days in sun in summer.

    Pulverize dried beef and dried blueberries in food processor.

  5. 5

    In cast iron pot, Render 1 1/2 pound tallow, melt slowly, sieve, pour back in cast iron pot, keep warm.

    Stir pulverized beef and pulverized blue berries a spoon full each at a time into molten tallow to let beef and berries absorb the fat. Keep adding meat and berries till mixture looks like in the picture in here.

    Press pemmican the size of hamburger patties on parchment paper into wide mouth mason jar rings. Wrap in parchment paper and store in insect proof container. Label and date. Eat and make once a year for quality control.
