  • as neededCooked spinach,
  • 3 ozgrated Parmesan cheese (about 80 grams)
  • Black pepper, to taste
  • as neededOlive oil,

    Beat the eggs with the Parmesan, salt, and pepper.

    Add the spinach.

    Lightly oil a skillet, heat it, and pour in the egg mixture.

    Cook over low heat. When set, flip the frittata using a plate to help turn it over. Enjoy it hot or cold.
