Start by preparing all the ingredients. I recommend using them at room temperature for best results.

Pour the milk into a large mixing bowl, add the egg, and beat them together with an electric mixer for a few minutes. Gradually add the oat flour while mixing, until you have a smooth batter.

Heat a nonstick skillet and lightly grease it with olive oil. Once the pan is warm, over medium heat, pour about 4-5 tablespoons of batter into the center to form a circle. Cook until bubbles form on the surface, then quickly flip with a spatula and cook the other side.

As you cook each pancake, remove it from the skillet and place it on a plate. Once all the batter is used, decide how you want to serve them. I made 8 medium-sized pancakes—4 sweet and 4 savory. For the savory ones, I used different fillings like cheese and vegetables, but you can choose your favorites! For the sweet ones, I topped each with agave syrup, but you could use Nutella, jam, or anything you like. They're delicious both ways and homemade! See you in the next recipe!
