Spicy Pork

Inspired by a Donal Skehan recipe.
This dish can be served with rice or noodles and salad, I made a simple salad of shaved carrot, red onion, cherry tomatoes sprinkled with sumac. I used red chilli flakes in the dish but you could use a red sliced chilli or too if you like things really spicy.

Heat 1 tbsp of the sesame oil in a wok or large non stick frying pan over a high heat. Add the mince and break up using a wooden spoon. Fry the mince for 5-7 mins, keep stirring and scraping the bottom of the pan if it sticks, until it is golden and crispy.

Add the remaining oil to the mince, then stir in the ginger, garlic and chilli flakes or chilli and cook for a minute until fragrant. Add both soy sauces, sriracha, shaoxing wine and sugar and cook for a further minute. Remove from heat and stir through the juice from half the lime.

Serve with rice or noodles, salad, lime wedges and top with the chopped peanuts.
