First, wash and dry the cucumbers. Then give a rectangle cut in the centre, keeping the base intact.

Then remove the pulp and make the centre hollow. Then apply lemon juice and all over the centre. Sprinkle some salt and pepper in the centre.

Now mix the chole, paneer, carrots, onions, chopped curry leaves in a bowl. Add the spices and seasonings and toss well. Sprinkle with lemon juice and mix gently, taking care of not breaking the paneer pieces.

Chill then for 1 hour and serve with your favourite dip or chutney. Enjoy a delicious salad at any meal or a post workout snack.

Now spoon this salad in the centre of the cucumbers and press well. Also, arrange some chickpeas, onions and carrot pieces on toothpicks as sails on the boats.

Prepare all the boats similarly and use your imagination for extra garnish.
