These egg muffins are extremely customizable and easy to make. They can be made ahead and reheated (1.5 mins on power 7 for 2).

Preheat an oven to 350

Grease a muffin tin well

If using the option ads-ins, saute onions with 1 tbsp butter over medium-high heat until translucent. Add in the mushrooms, cook until done. Add in the spinach, stir for 30 seconds and remove from heat.

In a small bowl, whisk together the eggs and milk.

Put 2-3 tater tots into each muffin cup

If using the add-ins, evenly distribute with roughly 1-2 tbsp per muffin cup.

Evenly distribute the diced ham in the muffin cups.

Pour the egg mixture into each cup until almost full. Leave a bit of room as the egg will puff as it bakes

Sprinkle cheese over the egg in each cup.

Bake for 20 mins and check to see if done. A toothpick inserted should come out clean.

If not done bake another 5 minutes.

Remove from oven and let cool for 10 minutes.

Serve warm or remove, let chill, and pack in airtight container. They can be stored in the fridge for up to a week.
