Black rice is scented, purple black in colour and indigenous in many parts of India, China. It's also known as 'Forbidden Rice'. As the Royal family members of China were using this delicious rice, it was not easy for common people to get the black rice.

Ingredients

20 minutes
3 to 4 servings
  1. 3/4 cupblack rice
  2. 1.3 cupwater
  3. 1/2 Tspsalt
  4. 1 Tspextra virgin olive oil
  5. 1/2 cupchopped orange
  6. 2 Tbspchopped cranberries
  7. 1/2 cupchopped apple
  8. 1/3 cupchopped pear
  9. 3fresh green olive chopped
  10. 1/3 cupchopped almonds and Pistachio
  11. 1/2 cuphomemade cheese
  12. For the sauce
  13. 1lemon juice
  14. 2 Tbspmaple syrup
  15. 1/2 Tspdry ginger powder
  16. 1/2 Tspground black pepper
  17. 1 pinchblack salt

Cooking Instructions

20 minutes

    Arrange and assemble the ingredients. Wash the black rice with cold water 2 to 3 times to remove the dirt. Soak for 15

    Cook the black rice with salt, extra virgin olive oil on medium to low flame till aromatic and done. It takes usually 15 to 20 minutes. Cover and set aside, the cooked rice.

    Prepare the sauce with the ingredients mentioned above.

    Mix the chopped fruits, followed by chopped nuts, the prepared sauc and the cheese.

    Mix the sauce well with cooked black rice. Garnish with chopped mint leaves before serving. Njoy. Thanks.
