With the beautiful days settling in, here's a Niçoise rice salad where you can add a bit of whatever you have on hand ✋
Cooking Instructions

Start by cooking your rice 🍚 here in the Cookeo for 10 minutes under pressure. Once cooked, set aside and let cool. Then cook your eggs, adding white vinegar to the cooking water to make peeling easier. Use the quick cooking mode for 9 minutes. Peel them and let them cool.

Next, slice your tomatoes. Chop the onion finely. In a salad bowl, place the cooled rice 🍚. Add the can of corn and the can of tuna. Add the tomatoes 🍅 and the onion. Cut the eggs into pieces. Mix everything, season with salt and pepper. Add the parsley.

Prepare your vinaigrette. In a bowl, add the oil, wine vinegar, salt, and pepper. Add this mixture to the rice salad.

Adjust the seasoning if necessary and add a few drops of vinegar. Chill until ready to serve.

This dish came from just loving certain flavors/textures all together. Like a sushi roll without the nori. It was so good i forgot the nori and avocado in the picture lol and i have some.
