On this Mahashivratri creating kheer with carrot, cabbage, and paneer is a unique twist!

Heat a tablespoon of ghee in a pan and fry dry fruits first, then saute the vegetables for a couple of minutes and then fry the cubed paneer until it turns golden brown. Set aside.

Now in the pan add milk and let it come to a boil. Once it boils, reduce the heat and let it simmer.

Add the grated carrot and cabbage to the simmering milk. Add powdered milk here, to thicken the milk. Cook on low heat until the vegetables are soft and the milk reduces to a creamy consistency, stirring occasionally.

Once the vegetables are cooked and the milk has thickened, add sugar, condensed milk and mix well until it dissolves completely.

Add the fried paneer and chopped dry fruits. Stir well to combine all the ingredients.

Let the kheer simmer for a few more minutes until it reaches your desired consistency.

Once done, remove from heat and let it cool slightly before serving.Garnish with additional chopped nuts if desired.
