Steps

First take 4 bread slices, cut its sides as shown below. Now microwave them for about 10 seconds. If you microwave the bread slices, you will be able to fold and stick the bread slices easily. 4 bread slices will make 8 shahi tukdas.

Now roll then in a rolling pin and keep them aside.

Now we will prepare rabri. Start with boiling the milk. Boil it until it comes to 1/4th consistency. Keep stirring the milk continuously or else it may get burnt. In between add condensed milk according to your sweetness & combine it well. Finally add cardamom or elaichi powder & mix it well. Rabri is now ready.

Now divide the rabri equally in 4 bowls and add food colour of your choice and mix it. Now keep them inside a refrigerator.

Now let's prepare sugar syrup.
For this in a bowl add half cup sugar and 1 & half cup water. Add crushed cardomom too. Now boil everything to form a light sugar syrup. No need to form any string for this sugar syrup as in other sweets we do. Keep it aside and leave it as it is. - 6
Now let's make maida paste for sticking the sides. Take 2 tsp of maida & 2 tbsp of water, mix them well without any lumps as shown in the image below.

Now let's come to the bread part. Cut each of the slices in a triangular form then take a triangular part, keeping one of the vertex upward and 2 facing your side. (Refer to image 1) Now on the lower line gently apply the maida paste. Now fold one side as shown in second image and fold another side as shown in the third image.

Prepare the bread pockets with rest of slices in the same way. Now heat a pan. Add oil or ghee in it and fry them gradually until it becomes crispy & golden brown in colour.

Fry all the pockets in the same way, keep them aside.

Now dip the pockets one by one once in the sugar syrup and remove them immediately. Repeat the same with the rest of the slices and keep it aside. Remember, donot dip the pockets when the syrup is hot, or else the bread would turn mushy and soft instead of crispy. The syrup should be lukewarm and the pockets too.

Now place the bread slices over a serving platter & pour some colourful cold rabri over it. Finally garnish them with some chopped pistachios and silver foil (optional) and serve it. Your Shahi Tukda Pockets are now ready. Enjoy it with your family and loved ones this holi.
