One-Pot Spaghetti with Cherry Tomatoes and Kale

Bring water to boil. Meanwhile, place spaghetti, tomatoes, lemon zest, oil, pepper, and salt in a large, dry, shallow pan. Add other seasonings as desired.

Carefully pour boiling water over ingredients in the pan. Cover and bring to boil.

Remove lid and simmer for about 6 minutes, using tongs or spoon to move spaghetti around now and then so it doesn't stick.

Add kale and continue cooking until remaining liquid has reduced to a sauce and spaghetti is cooked through. Top with parmesan to serve.
