Ingredients

15 minutes
4 servings
  • 1 lbspaghetti
  • 1 lbcherry tomatoes, halved (about 2 pts)2 lemons, zested
  • 1/4 cupplus 3 T. Olive oil (I use 3 T only)2 tsp kosher salt
  • 1 bunchkale or spinach, leaves only, chopped
  • Just over 1 quart water
  • Pepper
  • Parmesan for topping

Steps

15 minutes
  1. 1

    Bring water to boil. Meanwhile, place spaghetti, tomatoes, lemon zest, oil, pepper, and salt in a large, dry, shallow pan. Add other seasonings as desired.

  2. 2

    Carefully pour boiling water over ingredients in the pan. Cover and bring to boil.

  3. 3

    Remove lid and simmer for about 6 minutes, using tongs or spoon to move spaghetti around now and then so it doesn't stick.

  4. 4

    Add kale and continue cooking until remaining liquid has reduced to a sauce and spaghetti is cooked through. Top with parmesan to serve.
