A lasagna for the holidays... The main ingredient is a seasonal vegetable from the Lazio region, the Roman artichokes known as 'Le Mammole'. I've added crumbled sausage and smoked scamorza cheese. It will be a flavorful and well-balanced main course that everyone will enjoy.

Ingredients

50 to 60 minutes
4 to 6 servings
  • 4Roman artichokes (Mammole)
  • 14 ozground sausage
  • White wine, as needed for deglazing
  • as neededExtra virgin olive oil,
  • 6 sheetslasagna noodles
  • 2 ozParmesan cheese
  • 3 1/2 ozbéchamel sauce
  • 3 1/2 ozsmoked provola cheese, sliced
  • as neededMint leaves,
  • 2green onions
  • as neededSalt and pepper,

Steps

50 to 60 minutes
  1. 1

    Prepare a sauté with oil and onion. In another pan, cook the sausage for a few minutes, breaking it apart.

    Cut the artichokes. Soak in water with lemon. Cut into wedges. Add them to the onion.

    Cook on low heat for 15 minutes. If needed, add a ladle of water. Add the crumbled sausage to the artichokes and season with salt and pepper. After 5 minutes, turn off the heat and let it cool slightly.

    Once the sauce is ready, take a baking dish and start layering the lasagna, sauce, Parmesan, and béchamel. On the last layer, add the smoked provola cheese and mint leaves.

    Bake for 40 minutes in a convection oven at 350°F. Let it cool for 10 minutes, then serve.
